While many Chinese run family businesses, many little stalls are one man shows. This guy was quietly preparing this noodle shop on his own in the early evening before the hungry crowds came. What was he thinking? Feeling? His practiced actions flowing from washing dishes to sticking things in the microwave, heating this broth, putting that dish on the right pile, didn’t give much away. Despite the bright kitchen lights, his face remained shaded. We didn’t stay to see if he would man the entire place all by himself.
But on his own or not, he was definitely very loved.
